Chocolate Chip Muffins

Did you know there are different varieties of chocolate chip muffins? There are Banana Chocolate Chip Muffins, Pumpkin Chocolate Chip Muffins and Cinnamon Chocolate Chip Muffins, just to name a few, and we've got all those recipes right here.

Banana Chocolate Chip Muffins

1 cup sugar

1 egg

1/2 cup butter, room temperature

1 cup mashed ripe bananas (3 med.)

3 Tablespoons milk

1 cup whole wheat flour

1 cup unbleached flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

1 cup chopped walnuts

  1. Preheat oven to 350.
  2. Grease and flour muffin tins or line with paper muffin cups.
  3. Combine butter and sugar; beat until thoroughly blended.
  4. Add the rest of the ingredients (except the walnuts) and mix until the dry ingredients are moistened, then beat until smooth.
  5. Fold walnuts into the batter by hand.
  6. Spoon batter into each muffin cup until 2/3 full.
  7. Bake for 15-17 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  8. Cool for 10 minutes before removing from the pan.

Pumpkin Chocolate Chip Muffins

1 1/2 cups all-purpose flour

1 1/2 cups whole-wheat flour

2 teaspoons baking soda

2 teaspoons baking powder

2 teaspoons ground cinnamon or pumpkin pie spice

1/2 teaspoon salt

4 large eggs, slightly beaten

2 cups sugar

1 can (15 oz.) 100% pure pumpkin

1 cup vegetable oil

2 cups semi-sweet chocolate chips

  1. Preheat oven to 350.
  2. Grease and flour muffin tins or line with paper muffin cups.
  3. Combine flours, baking soda, baking powder, cinnamon and salt in a medium bowl.
  4. Combine eggs and sugar in a large bowl, then add the pumpkin and oil. Mix well.
  5. Stir in flour mixture until moistened.
  6. Stir in chocolate chips.
  7. Spoon batter into each muffin cup until 2/3 full.
  8. Bake for 20-25 minutes or until top springs back when lightly touched.
  9. Cool for 5-10 minutes before removing from pan.

Makes three dozen muffins.

Cinnamon Chocolate Chip Muffins

1/2 teaspoon ground cinnamon

1 cup semi-sweet chocolate chips

1 3/4 cups all-purpose flour

1/3 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 egg, beaten

3/4 cup milk

1/4 cup vegetable oil

1/2 teaspoon vanilla

  1. Preheat oven to 400. (Reduce to 350 if your oven runs overly hot.)
  2. Grease and flour muffin tins or line with paper muffin cups.
  3. Mix the flour, sugar, baking powder, cinnamon and salt.
  4. Make a "well" in the center of the dry ingredients.
  5. In a smaller bowl, whisk the egg, milk, vegetable oil and vanilla together.
  6. Pour the liquid mixture in the well in the middle of the dry ingredients.
  7. Mix until just moistened, then fold in the chocolate chips by hand.
  8. Spoon batter into each muffin cup until 2/3 full.
  9. Bake for 20 minutes.
  10. Cool for 5-10 minutes before serving.

Makes one dozen muffins.

Basic Chocolate Chip Muffins

1 egg

1/2 cup milk

1/4 cup vegetable oil

1 1/2 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup chocolate chips

  1. Preheat oven to 400.
  2. Grease and flour muffin tins or line with paper muffin cups.
  3. Beat egg, then stir in milk and oil.
  4. Mix in remaining ingredients until flour is moistened. (Batter will be lumpy.)
  5. Spoon batter into each muffin cup until 2/3 full.
  6. Bake 20-25 minutes.
  7. Cool for 5-10 minutes before serving.
