A favorite in Europe

While here in the good old US of A we tend to opt for the milk version of our beloved chocolate, those in the Old World still prefer the most subtle and less sweet taste of dark chocolate truffles. The Europeans in general have more of a taste for dark chocolate and out of all the truffles that are available to them, it is dark chocolate truffles that sell the most. They have not become accustomed, as we have, to the added sugar and sweetness that is contained and gives the flavor to milk chocolate. But, much of that stems from the fact that it is all that was available to us for many years. We could not, like our cousins across the pond, simply go down to the candy store and pick up a few dark chocolate truffles any time we pleased. No, we had only about, well, yeah, one type of chocolate to chose from and, as we all know, that is much, much better than none! So we settled without even knowing that we were settling, and are only now waking up to the joys of dark chocolate truffles!

And now the chocolate that we all ate as kids is falling out of favor in many places in the US. The more we get a chance to travel and experience different countries and the chocolates that they produce, the more we are demanding more quality products like dark chocolate truffles. They have trickled in over the years, but you could still only find the best chocolates in specialty shops that we had to go out of our way for. Now you can get them shipped from overseas to your door with the click of a mouse! They will still be quite expensive, but sometimes we get what we pay for and this is one of those times.

The face of American chocolate itself is also on the brink of change. With more and more people knowing the luxury of truly fine chocolate it has become worth it for many chocolatiers to make it over here as well. Many Americans are getting their training abroad and trying their hand at making the same quality chocolates here in the States. Sometimes change is good, people.
